Full disclosure: These Quick & Easy Chocolate Peanut Butter Cookies were not supposed to be this week's blog post. I had fully planned to share a new delicious appetizer perfect for any Super Bowl party.
The appetizer ingredients and flavor combinations were spot on, the baking temperature and time were exactly right, but the execution needs to be tweaked just a bit. Sigh. And, alas, with working full time and going to grad school part-time, I just simply did not have time to start all over. All is not lost, though! We'll save the appetizer for another day, and we'll enjoy these Quick & Easy Chocolate Peanut Butter Cookies instead!
These cookies have saved my butt on many, many occasions. Not just today. In today's busy world, we don't always have time to bake up a culinary masterpiece. Maybe it's a bake sale that is sprung upon you at the last minute. Or a potluck that you simply don't have time for. Or maybe you are in a pinch and need just one last thing to round out your dessert table. Whatever the case, when you're pressed for time and need a crowd-pleasing cookie recipe, this is your new go-to. These cookies are simple, fast, and wonderfully tasty!

Believe it or not, you can make these cookies with only five ingredients! The secret to this recipe's simplicity is a devil's food cake mix. No need to mix flour, sugar, baking soda, etc. It's all in the box. Wonderful time-saver!
While I don't typically rely on boxed mixes, I definitely make an exception for these soft and chewy cookies. The devil's food cake mix gives the cookies such a deep, rich chocolate taste. Cream cheese contributes to the chewiness of these cookies, and creamy peanut butter blends with the chocolate of the cake mix to create a beloved, classic flavor combination.
My husband loves these Quick & Easy Chocolate Peanut Butter Cookies. He calls them "Heaven Cookies." They are that good. Especially yummy right out of the freezer, too. No need to thaw. And really, would you want to wait that long?

Servings: 38 -42
- 4 oz . cream cheese cubed and softened
- 3/4 cup creamy peanut butter
- 2 eggs
- 1 package devil's food cake mix 2-layer size
- 2 tablespoons granulated sugar

Heat oven to 375 degrees F. Line baking sheets with parchment paper or silicone baking mats.

Beat cream cheese, peanut butter, and eggs on medium speed for 2 minutes in the bowl of a stand mixer fitted with the paddle attachment. Add the cake mix and beat on medium speed for about 1 minute or until mixture pulls away from side of bowl.

Shape into 1-inch balls. Place dough balls approximately 2 inches apart on baking sheets. Dip tines of a fork in sugar, and flatten each ball with the fork in a criss-cross pattern.

Bake 7-8 minutes. Cool on baking sheet 2 minutes. Place cookies on wire rack to cool completely.
